Pumpkin apple crisp made with apples, pumpkin puree, whole wheat flour, rolled oats, and lots of fall flavors- perfect for serving over ice cream or vanilla yogurt!
Preheat the oven to 350 degrees. Spray a large baking dish or coat with butter.
In a large bowl, make the filling. Combine apples, maple syrup, brown sugar, pumpkin puree, vanilla extract, lemon juice, and spices.
Next, make the topping. Combine flour, oats, brown sugar, pecans, pumpkin pie spice, cinnamon, and salt. Next, add butter pieces and mix well using your hands, until the mixture is crumbly.
Top your apples with the oat topping!
Bake for about 35-40 minutes, depending on how crisp or soft you like your apples. Enjoy!
