Angel Hair Pasta Salad with Lemon Parmesan Dressing
Angel hair pasta salad is made with tender angel hair, crispy vegetables, sharp cheddar, and a homemade lemon parmesan vinaigrette. The thin noodles soak up the dressing beautifully, making this an easy, flavorful side dish for cookouts, meal prep, or weeknight dinners.
First, boil your angel hair pasta in a large pot of salted cold water for about 4-5 minutes or until cooked al dente (follow package directions). Drain and set aside. Note: I like to drain the pasta in the sink and then toss in cold running water, then toss with a little bit of olive oil to keep the pasta from skipping. This is an extra step, but helps!
In a small bowl, make the pasta salad dressing. Add white wine vinegar, lemon juice, olive oil, honey, fresh basil, parmesan cheese, Italian seasoning, salt and black pepper. Whisk until fully combined.
In a large bowl add cooked angel hair pasta, cherry tomatoes, cucumber, sweet onion and cubed cheddar.
Pour dressing over the pasta salad ingredients and toss until combined.
Notes
Cook the angel hair just until al dente. It cooks quickly, and overcooked noodles can become too soft once they're tossed with the dressing.
Drain the pasta well before adding the vinaigrette. Excess water can dilute the dressing and keep it from coating the noodles.
If making ahead, double the vinaigrette. The pasta absorbs a lot of the dressing as it chills, so tossing it with a little reserved dressing before serving brings the flavors back to life.
Toss again before serving. A quick stir redistributes the dressing and ingredients for the best flavor and texture.
